mechanical/mechatronical engineer here as well.

I am doing research through open EEG group to learn about the hardware as
well. I've just seen your thread and you seem to be doing exactly what i
plan to do.

How's going?
Did you find solution with arduino (32bit??)?

How about on multiple channels, did you find a way to chain multiple boards?

I have posibilities on my mind, and havent decided yet on which to realise,
that's why i am asking about your results.
