You can do this two ways, 1. with hardware, 2. with software

1. direct the signal coming out of the electrode into 3 relays, the first
relay will lead into you amplifier circuit for the EEG, the second for the
EMG, and the the third for the EKG. Then direct the output of each
amplifier circuit to the ADC
This method works, but may be prone to more noise than filtering digitally

2. have a broad pass band and high gain amplifier, then digitally filter
the incoming data based on the application by establishing three separate
filter protocols
This method will require a lot more time on the programming side, but the
signal should have less noise. However depending on you signal you may have
difficulties finding finding a suitable gain given the range of
biopotentials. You could rectify this by adding on a secondary amplifier
pre ADC for EEG collection
