I am also pretty interested in getting started with eeg's. I think the project on kickstarter - https://www.kickstarter.com/projects/openbci/openbci-an-open-source-brain-computer-interface-fo provides a good base to build on. However I think that building non contact biopotential sensors is defintely an interesting area. The main problem here is the movement artifacts, but what with the current trend of low cost 3d printing it can definitely be overcome. The non-contacts sensors have been explored in several research papers, howeever I still dont see a very active commmunity out there using such products ? I tried to build one of the capacitive electrodes using the project located https://code.google.com/p/opendous/wiki/BioSensorPlatform however since there were not too many people who were interested I ended up not doing.
