Beginner projects to prepare to building EEG

I've taken some basic electronics course (I'm currently finishing my BSc in Physics), where we built some basic circuits, but I've been pretty much spoonfed. So, my basic questions, what would be some good beginner-level projects to get some basic grasp of electronics to be capable of building openEEG?
