Setup for DHCP only

A programmer at work has set up a m0n0wall appliance on an ESX server 
that he wants to only be a DHCP server. This is to replace a noisy box 
running dnsmasq on FreeBSD 5. Everything works except for the gateway 
assignment. How do we set up m0n0wall to assign a different gateway as 
the default when issuing DHCP leases?
