Normalizing Logs

Greetings,

I can export a csv or XML file from my SIM that contains flows and
some packet content. The content is of course in HEX format.

Does anyone know of tool/script or method I could use to convert those HEX
formated fields to ascii? Is there some xml report writer that would
include this as a function?
