I would guess this is a regression bug in either IPCop's kernel config
or (unlikely) VMWare.
When I first tested IPCop 1.9 (1.9.5 I think) with VMWare 2.0 I meet
the same problem with the LSI Logic emulation, but this was working
with IPCop 1.9.7:

I would test your copy of VMware with 1.9.7 to see if the problem is
in IPCop or VMWare. If it is IPCop then compare the two kernel config
files for any SCSI changes.
ps. VMWare Server is now end of life, with no support available.
Virtual Box is a nice simple alternative, assuming that Oracle
don't drop it or mess it up in the future.
