You can put an absolute minimum build on the machine with no problems.
Apache is a simple addition. Gentoo also supports the NSA's SE Linux
extensions through their Hardened Gentoo project [
http://www.gentoo.org/proj/en/hardened/index.xml ]. Additionally, Gentoo
has their Gentoo Linux Security (GLSA) project [
http://www.gentoo.org/security/en/index.xml ] which makes security
updates available as soon as possible.

Take a look at their packages page [ http://packages.gentoo.org/ ] to
see a list of software ready to be installed. I migrated away from Red
Hat to Gentoo almost three years ago now and will never turn back.
