I'd begin by checking out the CentOS LAMP Hardening project. It's not complete but mostly talks about what security software is used to secure a CentOS host. Below is the link: http://www.securecentos.com/security.html Also, run nessus against it as it has a suite of CentOS plug-in in order to check related vulnerabilities. Hope this helps.
