Hi Eric,

Thanks for the report! Installing package menu [1] on your Ubuntu machine should give you a Zenmap (as root) application on your Dash, which would prompt you for your root password. This is because zenmap as root uses the su-as-root command, which is not available on Ubuntu by default. su-to-root is in the menu package, hence the above mentioned fix should work.
