Domino backup question

What is the fastest way to perform a Backup on Domino? Currently we backup 
the IFS Folder /NOTES, and this takes quite awhile [2+ hours].

Does anyone know the fastest way to back this up? My objective is to have 
Domino [i.e. Email] down for the shortest time during the backup. Is there 
a way to perform a Domino backup while the Domino server is still running?

Is this the only thing that should be backed up on a Daily basis?

Are there any URLs that could help me to make sure I am getting a complete 
backup [one that has all of the objects needed to run our email on another 
IBM i server]?
