I tried on my side to reproduce the problem and could generate a 5 GB
archive without problem under windows 10 Enterprise (the only windows
OS I have currently access to).

I suggest trying the binary version I provide at

ftp://ftp.dm3c.org/dar.linux.free.fr/Releases/Windows64bits/

and see whether the problem is still present with this version or not
running it outside Cygwin (from a windows command line window) paying
attention to the syntax to use in that context:

"c:\some\path with space\to\dar" -c backup-name -R /path/options ...

that's to say backslash for path to dar binary and normal slash for
options given to dar
