Well, you need to test UDP instead of TCP.  However, even if the iperf 
tests show no loss that doesn't mean that iperf and asterisk will agree.

Run a cross-over cable between dedicated interfaces between your HylaFAX 
server and your Asterisk server.  Don't run the IAX2 channels over your LAN.
