It seems to me that an entry of this kind should be what you need:

@INPROCEEDINGS{Rossi:Article,
  author = {Rossi, Luigi},
  title = {Article},
  booktitle = {Book},
  year = {1999},
  address = {London},
  publisher = {Publisher},
}

To add a field to a particular entry type, go to Options and select Customize 
entry types. If you do this only once, you may consider editing the entry as 
"BibTeX source", and you can do whatever you want.
