Did you try
\setfigureconversion[jpg][cmyk.pdf]
?

Or how did you get the “strange resolution”?

I’d generally suggest to leave CMYK conversion to the printshop and use 
PDF/X-4 with properly profiled images. But there are too many printshops 
that are >20 years behind in their workflow…
