redefining \type is a bad idea .. here is quits a run as i have overload 
protection enables

I'm sure Mikael will give you the answer that suits proper (abstract) 
mathematics but basicaly you want just text not a symbol

\startformula
   \mathtextit{theory} +
   \mathtextit{type} =
   \mtext{\it theory} +
   \mtext{\it type}
\stopformula
\stoptext

math fonts are not text fonts and some even behave very bad as text ... 
math italics are not text italics
