Liebe Marei, die Paketdoku ist doch recht klar: By default, the \operator@font command is defined to switch to the \mathrm font. \mathrm wird durch das firasans-math Paket nicht gesetzt, bleibt also auf Computer Modern. You may now change these using the command: \setoperatorfont\mathit Ich will aber nicht \mathit sondern \mathsf, also \setoperatorfont\mathsf Die von Dir angesprochenen Optionen werden nicht gebraucht, um den gewaehlten Font in math zu bringen, das macht das Paket immer (mit obiger Ausnahme!), sondern, wie die Doku sagt: For example, if in a particular document \mathbf is used only for choosing symbols of vectors and matrices, a dedicated symbol font (\symbf) will produce better spacing and will better match the main math font. In that case loading unicode-math with the mathbf=sym will achieve the desired result. Es geht mit =sym also doch darum, einen Symbol-Font statt der regulaeren Buchstaben zu verwenden, was die Funktionsnamen nicht betrifft.
