    Surprisingly enough, for many authors the mere instructions
    "Install TeX Live" is already complicated. 

It's not surprising. Unfortunately.

    I suspect many other journal classes would stop working with a TeX Live
    update, with authors left in the cold.

Yes, that would be bad. I can check how many fonts are involved.

    I'd rather vote for an "almost everything" option (everything but
    collection-fontsextra), 

Yes, that would be easy to offer. Just another scheme. Could make it an
option in the installer to make it easier to select, perhaps.
