If you do not see eps in the list of possible formats, this might mean that the corresponding plugin is missing, either not selected during installation or not covered by the license or some similar reason. One should keep in mind that converting raster images into eps usually results in huge files (though this disadvantage goes away after converting the resulting document into pdf).
