Problems using twopage and appendix

I'm using the following document definition:

\documentclass[twoside,letterpaper]{book}

This is so that all chapters appear on the odd numbered page and it
works quite well. I break my document into parts using the \part
command. So when it comes to the Appendix, I have:

\part{Appendix}

\appendix

\chapter{CSc Lab Layouts}\label{app:layout}

The appendix appears on the even numbered page. This leaves two blank
pages between (one after a \part command and the odd numbered page where
the appendix should appear).

Problem is, looking at book.cls, the \appendix command doesn't seem to
make a new page as far as I can tell for chapters, So I'm wondering why
it's doing this first of all. Second, what should I do to define
appendix properly in my document so it doesn't do this?

Thanks in advance.
