You may or may not realize this, but the Office 2007 file formats *are* ZIP
archives which contain XML documents.  The Office 2007 user interface
conceals this fact like any good UI would (why should users care about the
internal format of their data files?), but it's not altogether out of line
for a web server or client to want to open those things with a ZIP program.

Setting up the right MIME types in Apache is the correct first step,
especially if you did this by adding the right mappings to Apache's
mime.types file.  Once that's done, you can configure ViewVC to actually
refer to Apache's mime.types file for its own mappings.  Simply set
mime_types_file = /path/to/apache2/conf/mime.types.
