For CVS repositories, just select the branch of interest from the directory listing, and ViewVC switches into a mode where it's only showing commits on that branch.  For graphical display of per-file changes (with branches/tags/etc.), you need to enable and configure ViewVC's cvsgraph integration.

Subversion views in ViewVC have no similar interface, nor is there any known graphical display generator for Subversion.  A directory log display of that branch's directory is the best that ViewVC can offer right now for Subversion -- similar to running 'svn log URL-OF-BRANCH'.
