Ok from looking at the image I can see one thing wrong right off. You have subsurf on. Remember that subsurfacing is a mathmatical calculation done at drawing time in the 3d window and at render time when you use the second button in the subsuf group to make the mesh that is being suburfed look smother and more organic. There ARE NO REAL\ACUTUAL mesh vertices in a subsurf. So since there are no vertices you cannot apply vertex colors to them. What you should to did temporarily turn subsurf off, vertex paint your mesh. Turn subsurf back on to see how the painting fits with what will be your final render, go back and adjust the paint. If you already have the shape that you want while the mesh is subsurf you need to pers Shift-Alt-C or I think Alt-C to turn the subsurf into actual mesh data then vertex paint right there.
