Should I be adding > that number to the end of my materials? > No, you don't have to. The number is the default suffix to the non-descript "material" name assigned automatically. You can rename the material anything you like. However, if you copy a material (useful when you want something that is almost the same) Blender will add the numeric suffix (which you can again rename entirely) to the original name to allow saving the changes without affecting the original when you tweak the variation in colour, texture, etc. for your slightly different material.
