Creating looooong hair (from a Blender newbie)

I'm new to blender, having only used it for less than a week. I'm 
already getting the hang out of toying around with the hair, creating 
it as loooong and thick on the models as possible. I was wondering how 
to create hair so that it doesn't protrude below the x- and y- axis?
