In general terms, yes of course. If you have a good picture from the
side, assuming it's standing or sitting symmetrically, but I've
generally have seen him with one hand down flat open on his lap, and
the other in the air. You may have to work from 2 or 3 pictures for
different angles and body parts and then assemble those.

But in general, yes you can.

What do you want with the 3D model, view it from a different angle? 

In the simplest case, Archipelis will have the same texture in the
back as in the front, if you work from just one image.

It works really well though in many life forms which are symmetrical,
such as most fish. A side view will do very well.

basic results.

What's the final format and use, Second Life? 3D animation rendering?
Game content?
