One thing you could try is using vloopback [1] (at least if you are
running linux with a 2.4 kernel).
After loading the vloopback kernel module,
just select the vloopback outputdriver in the image output module.
Theoretically you can record with any application that supports
v4l input (I tried camstream).

Martin is currently building a yuv4mpeg output. This will make it easy
to produce a stream that is understood by the mjpegtools and probably
mplayer. I'm not sure what the current status is, and whether it
will be included in the upcoming 0.4.1 release.

A third alternative is to compile gephex with png support
(configure --with-LIBPNG). This builds an imagewriter module
that writes out all frames as png files (I think this can
be turned into a movie by mencoder, but I'm not sure).
This does not work on win32, however (no libpng support there).
