If you've never used programs like Photoshop before, you have two tasks:  get an understanding of basic image manipulation, things like layers, masks, what the tools do, how colours are represented, and so on; and then get an understanding of how Gimp implements those things.  There are a plethora of basic how-tos in image manipulation and the Photoshop ones would be ok for this.

If you understand all this and you just want to get a grip on Gimp, there are quite a few, but I've found http://www.meethtegimp.org in particular to be very helpful, especially the first several sessions where he concentrates on photo images.  It's a video podcast and your host is a teacher who seems to very much understand how to present things in a progressive way so you're not left floundering.  Recommended.
