Neither is easy to learn. Both require understanding what you are
doing, and understanding concepts like layers. If you already know
either of them well, the other one will feel "more difficult" and
"less intuitive".

To be able to "grab text", the text must be on a separate layer in the
first place. If you already have saved the image in a format like JPEG
or PNG, it is just one layer, and "grabbing text" won't really be an
option. Please tell us more what exactly you have tried.
