In which case you can, on Linux, use tccat/tcextract to get the audio 
and video streams from the DVD, in MPEG2 format, and possibly mplex to 
recombine them into a single MPEG2 file. It's been a while since I used 
to do this, so there may be a better way, now.

You'd then be looking for something that will edit MPEG2 files; I've not 
done that, so I can't help you there, but I know such tools exist, e.g. 
MPEG StreamClip being a good MacOS one, and I believe ProjectX is a 
good, if complicated, Java app.
