Linux in the Film Industry Stats

What sort of statistical breakdown would you want? Broken across what?

All the major animation and visual effects facilities use Linux. Most 
small facilities do not. Every major film that is animation or has big 
visual effects uses Linux. Few small films use Linux.

That 99% of big effects films use Linux doesn't necessarily mean 99% of 
the software at studios is Linux. It depends on what part of the film 
process you're talking about. Avid (Windows and Mac) and Final Cut Pro 
(Mac) are the dominant studio edit systems. Pixar is the only major 
studio I'm aware of that edits on Linux (using Piranha). ProTools (Mac) 
dominates for sound editing.
