as you wrote it's all documented in DOCS/en/video.xml:
h = next channel
k = prev. channel
configure with --enable-menu and run
mplayer -menu
to activate a submenu "DVB" of channels that you can navigate with up
and down arrow
Afaik gmplayer doesn't show the DVB submenu.
