Before you send out the INVITE, you can set the From to anything you 
like. After that, it has to remain the same throughout the Dialog (but 
SIP stack AFAIK does not enforce this, so if you create a mid-dialog 
request and then change the From header, it will send it out. Other side 
may have a problem with it though)

On UAS side you shouldn't change the From header either
