Hello,

there are some older books, like this one "SIP understanding the session initiation protocol fourth edition". You can also find this as PDF.

There are some newer books in other languages as well.

There is one newer in English "Handbook on Session Initiation Protocol: Networked Multimedia Communications for Ip Telephony", but I did not read it yet.
