Hal, a friend of mine recently created a great set of online training videos for a graphics application he designed. I believe he used Camtasia. Personally I'm a little impatient for videos (as a user). But he kept them short, task-oriented, and they are pretty darn good. For an application that's used intensively, Matt's suggestion is a good one to consider. I'd be happy to put you in touch with my friend if you wish. (No relation to the company or product.) You might also consider a training web site, or similar where users can go to learn about how to accomplish given tasks.
