That was my first thought, too, although I really haven't used either 
SVG or Canvas beyond simple tests.  But when I went to look at the 
Canvas documentation, there didn't seem to be any way of addressing 
individual pixels, which I think you would need to create some sort of 
gray-scale filter.  Maybe I'm missing something, but I can't see how to 
do it.
