I hate to say this on a list where most of the devs are hardened Apache 
users, but if you've got less than 10 virtual hosts for an IP you might 
find the (free as in beer) LiteSpeed Web Server a lot less hassle;

There are others (eg, Zeus, premium THTTPD) that are similar commercial 
"black box" web servers that are IMHO a much better fit for the FastCGI 
model.  They do a few simple things well.

In my experience, LiteSpeed has done everything I've needed, and when it 
didn't the developers quickly added the features.  YMMV of course.
