I've read the asnwer on the blog of a GNOME developer(don't remember
which one): in the passage from 2.6 to 2.8 GNOME has changed the way of
handling MIME associations adopting the freedesktop.org standard and it
seems that nobody has bothered to rewrite the capplet that handled the
associations(or just change the existing one)
that's why you can't find it any more :(
