a question about the example of maverick

Hello, I like to know the difference between xsl:copy-of and xsl-apply-template
we use a model of page xsl and a page xsl 
 
first method :
 
<xsl:template match="@*|node()">
            <xsl:copy>
                <xsl:apply-templates select="@*|node()"/>
            </xsl:copy>
        </xsl:template>
....
    <xsl:apply-templates select="head"/>

second method:
<xsl:copy-of select="head>
