The problem here is that Safari is the software that is offering the  
Service to search in Google, hence the reason it launches when using  
that Service. I think the following freeware third party service will  
pass the option off to your default browser rather than Safari:

Note, you can use Service Scrubber to customise your Services menu to  
remove the Safari Search Google option:
