I am having this exact same problem... I wish there was a way to bypass Oscommerces, unefficient way of inputting product attributes...

IE.. When putting in a product attributes, when I assign the 'Option Name', I should not be allowed to put in a different options values..   My site sells wheels and tires.  I have an option named 'wheel size' with the option value of 18x7.5 Chrome, and a 'tire size' attribute with the value of 255/40Vr-17, but for some stupid reason, I can set up a product, set the option name to wheel size, and then assign it another options value.. ie.. Wheel Size = 255/40Vr-17

I know thats a little off-topic, but Im having the same problem as this thread describes also.
