how to get order subtotal, shipping, taxes, and total amount

Okay, I'm not too clear on how to do this...   :?: 

I am trying to create a payment module but I need to find out the order subtotal, shipping cost, taxes, and total (but I can calculate that if I have the other fields).

What functions would I call to get these?
