Product Options

I am working with products that have options.  I don't see a field to enter an option price.  What triggers the option?  How can I allow the customer to select an option and then add an option price to the total.  And, what if the customer wants 2 of one option and 3 of another to add to the main product?

I am new to oscommerce, so please give me some details.
