I think it could be possible by adding to each table an extra merchant_id field, but it doesn't make much sense, because each site will have to use the same layout (although it's possible to change the CSS file per site, for example using my contrib http://www.oscommerce.com/community/contributions,1464    where the stylesheet name is held in configuration table). Apart from that, every client would get the same layout and the same set of boxes, images, header images, shipping&all the information. It's possible to put which boxes,images,info to show into a db table (like the stylesheet name), but the layout is nearly impossible to change for different users (a lot of work). Why do you want to do that? To save some disk space? Not worth! To enable central updates of the site? Better argument. If you can bear the same basic layout for each customer (just different colors/boxes/products/images), you can PM or e-mail me for more details.
