I have this built into SECv2.2 where you can set the order of the Option Names and Option Values and then set the individual attributes sort order per product.

Later if you want to change the orders you can do this on a per product, per category or on all products in the store based on the settings for the Option Value Sort Order.

There are settings under the Catelog for Option Name Sorter and Option Value Sorter

This was just updated to make it easier to use and will be in SECv2.2b ... but there is a similar version in the current release of this Loaded version.
