help with dedicated hosting

They are a very laid back in their approach to the web and have finally given in to the idea of something other then a free Perl shopping cart that is at least 5 years old. Anyway, my primary concern is that they will be featured on the Food Network they currently have a shared hosting solution at a small local provider. I need to move them, and I believe that I need to keep them away from a shared solution, does anyone have any suggestions on how to approach this, and on how to best try and guess what they're bandwidth needs will be, if I they werent coming out of the wood work like they are, as in having a site that generated good traffic reports, then I could estimate the jump in traffic, but really they are going from 0 to 1 billion in three short months.
