Interesting discussion which I myself am very intereted in.

Regarding losing clients, I don't know what you target market is going to be but in many cases I would imagine (and hope) that just giving them
darned good service and establishing a good biz. relationship with your customers (and not overcharging of course) will keep them around. 

Look at webhosting for example (not ecommerce, just any old). I myself have moved my site around to diffrent webhosts starting back in 1998 or something. Webhosting just keeps getting cheaper and cheaper, and even free. And guess what? The cheaper they are the less I have been satisfied. 

All I'm saying is, maybe you don't even have to be cheapest to keep your customers. If they are making money and its your commision that is their beef, then maybe your commision is too high or they are too greedy. In any case, moving an established site to another is never just cut and paste, so most businesses, if they have any sense, will avoid it.

Maybe you can put in the contract that you have very limited obligations to help them when/if they want to move.  I don't know.

MY BIG QUESTION is, according to the GPL etc, is it even legal to take a commision from a customer using oscommerce.? Have you already established this?
