Please help before I give up.....

I realize you really should be a programmer to use Oscommerce, but I'm determined.  I already have white hair, so what do I have to loose.  I started a few months ago and gave up, but I really want to use this program so I've decided to give it another shot.   I have a few problems I don't know how to fix and searching has done no good.

1...I added a search and category bar in the header, but can't get it right.  I also don't know enough to just get rid of it.  I somehow have the links under the purple bar on the left and can't seem to get them out.  I have links above, so maybe I don't need them, except the "log out" only shows below.  I know this has messed up the cool menu but I haven't fixed it because I know it will change again if I can fix the links.

2...I don't know how I got the tiny arrows on the info box headers.  They seem to go to category/1 which is nothing.  I need to get rid of them, but again I don't know where they came from.

3...I can't figure out how to get meta tags on the main page, like title, description, etc.  I don't know where to put them. 

I don't have the ssl or credit cards running yet, my web provider switched us to a new server and there is a problem with ssl that they are trying to resolve.  I'm sure once I try to add the ssl and the credit card functions, I'll once again need help.  The link is http://www.cottagerose.com/catalog/default.php .
