Admin ability to change invoiced items

I find it frustrating that when prcessing an order that admin cant change the invoiced products.
Sometimes when we sell a product (in my case DVD) on the site the title may not be available and there is no way of taking the item off the order invoice. So the Invoice the customer gets shows an incorrect billing amount ... that is not good for a number of reasons.
We dont use the in stock option but I can see that even if you did that it would be a problem as the sale is irreversible when processing.

I would like to see the admin having edit rights to the invoice
