OK, thanks, presumably you add the flavour .html files to the data
directory where .txt (and/or .rst files) are?  Will this give the
flavour to just that level or will it apply to all sub-directories as
well?

Yes, OK, that's fine.  I'm not very HTML/CSS aware though and I
initially found it rather confusing.  Maybe some notes and/or asking
for some documentation with flavours (as for templates) would help.
